Cooking Hints
Yeah! My hubby has lost 51 pounds! A huge milestone and he looks so good!
If we cook it, we will eat it! If you are trying to lose weight or just cut back on your meat consumption, don't cook as much. Three boneless chicken breast grilled will not feed five people - BUT - three diced grilled chicken breast in a vegetable and rice casserole yields a hearty meal for the family with no scrimping on taste! The same applies to boneless pork chops and beef. With the pork I use cream of celery soup in my casserole and with the beef I use cream of mushroom soup.
Do you still make biscuits? If I make a pan of ten biscuits, we will eat everyone! If I make a pan of 36 biscuits, we will eat maybe five. I make biscuits twice a week and store them in an air tight container. Biscuits store very well if kept in a sealed container. We take out what we want, pop in the microwave for 20-30 seconds and we don't overeat. We still get our homemade biscuits everyday and I am not heating my oven everyday.

Spring is Coming!
If I say that enough, maybe it will come on! Check the weather for our area this morning and guess what 3 days of 50 degree weather, followed by another cold week. But no rain, except for Monday, so-o-o I cut my potatoes so they can cure and I can finally get them planted. I had read that it was best to allow the cuts on the potatoes to "scab" over to prevent rot. I had never heard this before and have previously just cut and planted. Maybe this will mean more as well as healthier plants.
I know I am late in my planting, but according to my friends planting chart I should be able to plant on the 1st through the 6th of March. That will give the little cuts 10 days to cure before going in the now soggy ground. I tried to test the ground last week. I dug a little hole which immediately filled with water. My little potato eyes wouldn't stand a chance, so I have postponed until the ground can dry a bit and warm up a little.
I am so anxious to see new green growth I can hardly stand it. Even the chickens are no laying regular. Guess their little tushes get cold trying to push those eggs out. Can't much blame them. Chickens actually need so many hours of sun a day to be productive layers and we definitely have been lacking in getting sunshine.
I still have much pruning to do. Yes, I am behind on that too, but I have an aversion to not only cold, but wet weather. Combine the two and I become non-functional.
I want to insert a request before I bid you farewell for today. The season is always in for giving and supporting the Breast Cancer Foundation. It is coming on the time for the wonderful efforts of the many "relays for life". As a breast cancer survivor I would much appreciate all the support you can give in any of these efforts whether it be time, money, or some other venue. But right now you can click on the breast cancer awareness site and "click" for free mamograms. There have been tremendous strides in the fight against all cancers. Any and all support is greatly appreciated!

I know I am late in my planting, but according to my friends planting chart I should be able to plant on the 1st through the 6th of March. My Zero
So tiny, so white, so sweet, Zero's name came from my favorite candy bar.
Zero is my oldest chihuahua which I received as a birthday present 5 years ago. A teeny tiny thing, white with the cutest pink nose, he quickly ruled my world. A cuddle bunny by nature, he sat tucked under his cover sleeping peacefully while I read and Hubby watched TV. Hubby could not stand to leave him alone during the day and would stop by the house to check on him every chance he got, sometimes scooping him up to ride with him on his many trips.
A bit of knowledge - Chihuahua's never grow up. They get bigger and older, but emotionally they remain babies. Zero still sucks a sock he took over when he was a baby, but will also suck on the side of your pants or top while sleeping. Chihuahua's also love their cover, probably because they are easily chilled, and will burrow under rather than sleep on their blanket. Chihuahua's are also wonderful watch dogs, but are not much protection unless the agressor has weak ankles. The Chihuahua shiver comes from a number of things - fear, cold, excitement - they just shiver and shake.
The first year of Zero's life was one of leisure. He laid around in the sun on the porch, nibbled at the many treats he was provided and oohed and aahed over by everyone who came to visit. He remained a small white bundle of joy. He lays on the porch in the late afternoon soaking up the sun (chihuahuas will do this for hours) and loved the weekends when he could stay out all day. Then one Saturday he disappeared. Hubby was changing the oil in the truck and he had brought Zero off the porch. Zero was too small to go down the steps and had been on the ground only a few times. Busy with the vehicle, Hubby failed to see the little white dot at the edge of the yard, but was alerted by a truck that had stopped on our rural road. Standing up to stretch, he noticed the details of the truck as the truck took off racing down the road. Then he noticed that Zero was no where to be found. He ran into the house looking for our baby only to find no Zero. I grieved! I cried, I blamed, I was really distraught. Putting our heads together, we started investigating the truck. It took until Thursday, but with the assistance of some friends Zero was found and returned. If he wasn't spoiled before, he sure was immediately following his return. He was filthy dirty, smelled horrible, and was starved and thirsty. In just a few hours he was back to his "King" status though still cautious with fear wavering in his eyes. Needless to say Zero is not left unattended much any more.
Very defiant, if ignored or disciplined, Zero will get revenge. You just never know the form the revenge will take. Jealous of strangers, but wonderful with the grandchildren, he knows the difference.
Thank you Hubby for the best birthday present I have ever received.
